Sabrina's Birthday Cake


My coworker, Sabrina, had a birthday on Tuesday.  Her mom sent this cake along for the office to enjoy.  This has to be the largest cake I have seen in a very long time!

It was baked in a roasting pan a good six inches deep to accommodate all the layers involved.

It was like an English Trifle, with layers of yummy goodness: first yellow cake, topped with a layer of banana pudding, which was then topped with sliced bananas, and a layer of crushed pineapple, followed by  a humongous layer of whipped cream topping, finished off with a layer of shredded coconut and maraschino cherries.

Sabrina's mom calls this "Better Than Sex" cake.  If that name makes you uncomfortable (ha!), I  think you could also safely call it an Hawaiian Cake.  It doesn't look like it would be hard to throw together, either, but the result is superb.  It's really moist and has all the flavors of the islands, mon.  But with the colorful cherries on top, it would also work well for Valentine's Day, which is just around the corner.

Sabrina testifies to the fact that her mom also makes a chocolate version of this cake, with chocolate pudding and canned cherry pie filling.... mmmmmmm.  

All 30-something of us in the office found it hard to resist, but we barely put a dent in it over a couple of days  - that was a LOT of cake!
